New owners of Adams Donuts in Greenfield carry on legacy

GREENFIELD — Time for somebody else to make the doughnuts.
Four years after purchasing Adams Donuts at 348 Federal St., Sabra Billings has handed her apron strings to Sereyvith “David” Mon and Kosal Chum, who took ownership of the business on Aug. 5.
“I feel that the community is really fortunate that David and Kosal have taken over Adams. Kosal literally has three times as much experience making doughnuts than I do,” Billings said. “I’m really, really excited for them and I’m really excited for the future.”
She mentioned she is still helping out, including handling social media, during a transition period. But Mon said he and cousin-in-law Chum are settling in to their news digs.
“It’s been pretty good,” he said. “People are very welcoming and they’re glad we kept things the same, the way they are.”
Billings said it was a condition of the sale that “Adams remains Adams.”
Mon, who spent his formative years in Lynn, said he and Chum wanted to own a small business and found Adams Donuts listed online after searching states more toward the western part of the country, as Chum was living in Nevada. The two were initially hesitant about owning an independent doughnut shop in a region known for its love of the Dunkin’ chain but decided to make the leap.
“[Adams] has a community feel to it and we like it,” Mon said.

He worked weekends to learn the ropes from Billings before the business changed ownership and Chum has been getting his feet wet and meeting his customers for about three months.
“They are friendly,” he said. “It’s going. It’s good.”
Mon said the doughnuts are now made each morning as opposed to the night before, and people already have been commenting on the freshness. He and Chum mentioned Adams will be open seven days a week starting Sept. 1.
According to the shop’s website, Charles and Myra Adams started the business when they began making doughnuts in their Conway Street garage in the 1940s. They opened Adams Donuts in the current location in 1956 and their son, Earl, and other Adams family members continued to operate the shop until 1989, when it was sold outside of the Adams family for the first time.
After a few changes in ownership, the shop closed down in March 2020 as a result of the restrictions imposed by the state to curb the spread of COVID-19. In the fall of 2020, sisters Billings and her sister bought Adams. They maintained Adam’s famous favorite doughnut varieties, branded as Adams Classics, and added a new line of premium doughnuts branded as Adams Fancies. Billings explained her sister amicably parted ways with the business after less than a year.
Billings said it is a “weekend-heavy” industry and she struggled with the work/life balance. She worked in operations and supply chain management before dabbling in doughnuts and has taken a full-time job with a company she had been consulting for. This led to her decision to sell Adams.
“It was just really an incredible experience and it was really challenging, especially in the beginning because neither of us had ever made doughnuts before and neither one of us had been business owners,” Billings said.
